blueberry turnovers

blueberry turnovers!
i've always always always loved the blueberry turnovers in our school cafeteria. crusty exterior with soft and slightly sweet interior... i could eat it every day during break time (which i didn't...)

anyhow i stumbled upon laura vitale's recipe on blueberry turnover awhile ago and since i recently made nutella croissant with puff pastry, i thought i'd give blueberry turnovers a try (they seem completely irrelevant don't they... croissants and turnovers... but they're both made of puff pastry).

before i looked at the recipe, i always thought you could just fill blueberry preserves inside puff pastry to make these turnovers... but i was terribly mistaken (maybe they do that in some other recipes... but not in laura's...).

these blueberries costed flipping 85nt which is roughly like 3 dollars or something... mother ef.
there were fairly large amount of ingredients (for such simple dish) like lemon, vanilla extract, egg yolk (i removed the egg white to prepare for my official documented macaron making which will come very soon :D), and the strangest of all, cream cheese. when i saw the recipe and it called for cream cheese, i really thought, is that even necessary?! (i still think it's unnecessary considering how i don't taste the cream cheese... but i don't doubt laura's amazing skills... there must be a reason... there must...)

here's a picture of what goes inside the puff pastry... blueberry and some weird mixture of cream cheese and lemon juice and... all sorts of stuff... i brushed the sides with egg wash which is a mixture of egg and water...


i also brushed the egg wash on top of the puff pastry after i sealed the puff pastry... then i spliced a little hole on the top to prevent the juice in the inside from bursting out (which i heard does happen...)

it was a torturous wait when the turnovers were inside the oven for 18 minutes (the recipe called for 25 but it was already golden brown around 18 minutes and i didn't want to burn these pretty babies)

they were bubbling with these blueberry juice and it smelled amazing in the house (hallelujah)... it was so amazing i had to try it out right away and i burnt my fingers in the process... (but it was worth it... they were better and healthier than the turnovers i've had at our school cafeteria... DARE I SAY...)


i had a nice cup of orange juice to go with my turnover and in a matter of seconds i finished it.

BOOM! DONE.
this turnover recipe is definitely worth a try... i'm definitely making these and bringing them to korea for my sister :)
